Asparagus Everyone Loves!

I think we can all agree that Asparagus is a love or hate vegetable. I love it, Andrew hates it. I want to gorge it, he wants to burn it. However, eating the same vegetables every week is SUCH a drag and I begin to despise them. Thus, I was determined to make it in a way he would eat it and note hate it… baby steps.

Which brings me to this last Monday’s meal. Every Monday, as many of you know, it’s Bachelor or Bachelorette night! You may love it, you may hate it, but don’t judge. I know it’s not reality so you can save yourself 5 minutes of soap boxing to me about how unrealistic it is. That’s why it’s on television I suppose.

Anyway, I digress. On to eating delicious food!

A couple of my close friends and I do pot luck meals where each week, we will pick a main dish, side, or dessert to bring and gorge while we watch the drama. The pot luck is the only thing that keeps the guys in the living room, let’s be honest. This week, I decided to experiment with an asparagus side dish… and I just have to say, it was so yummy. We ate it all and I definitely wanted more. Did I mention it was the easiest thing ever?? It’s a win-win recipe!

Baked Garlic-Lemon Asparagus
Instructions
  1. Preheat oven to 375 degrees fahrenheit.
  2. Rinse and pat asparagus dry. Then lay evenly across baking pan
  3. Evenly spread chopped garlic cloves among asparagus. Sprinkle salt & pepper on top.
  4. Evenly pour avocado oil and juice of lemon over asparagus.
  5. Bake dish for 15-20 minutes. Asparagus should be barely showing wrinkles and slightly crisped. Should not look wrinkled and soggy.
  6. Spread parmesan cheese on top of asparagus and place back in oven for 3-5 minutes. Cheese should be melted.
  7. Serve immediately!
