Can we just get real honest? It is HARD to truly love making salads. Especially when your husband doesn’t like any fruit to be on them. So when looking through ideas of what salads to make for us, about 80% of the creative ideas are off the table… literally. This leads to endless (what feels like) hours of searching on Pinterest which then turns into irritation due to no discovery of the right salad. The next thing you know, I’m crying on the couch feeling like salad has never loved me in the first place. So I’ll just have some chocolate instead.
That may be all a little exaggerated, except for only sort of.
Truly, I find creativity in salad recipes one of the biggest challenges in my kitchen. There are only so many combinations that work together well in that little bowl. Let’s add that without fruit, the options are much smaller… I digress. Which is why I gave up on using recipes for them much.
Now, my theme is more so along the lines of “what’s in my fridge that I could throw into a bowl?”
As a result of that experiment, I present to you the “Extreme Cobb Makeover”
Pretty, right? It tasted just as good. And is super simple to make!
